Abstract

This study aims to reconstruct the 3D design, evaluate the power transmission system, and test the mechanical performance of a No. 12 meat grinder powered by a 0.5 HP (373 Watt) dynamo. The reconstruction results show that the configuration of the drive pulley (D1 = 60 mm) and driven pulley (D2 = 120 mm) successfully forms a speed reduction system with a 2:1 ratio. This system reduces the motor speed from 1400 RPM to the optimum grinding shaft speed of 280 RPM, while simultaneously increasing the output torque to 5.30-7.51 Nm to safely extrude meat without damaging the protein emulsion due to frictional heat. Operational test results indicate that the fiber characteristics of the material have a linear effect on time and power consumption. Grinding 1 kg of chicken meat takes 46.00 seconds (capacity 78.26 kg/hour) with an actual power of 160.16 Watts. Meanwhile, grinding 1 kg of beef thigh meat took 53.00 seconds (capacity 67.92 kg/hour) at 187.44 watts. At a peak load of 2 kg of beef, the power increased to 227.04 watts (the motor was operating safely/underloaded). Visually, the output meat strands were finely and homogeneously cut. The strength calculation of the grinding shaft pin (l2 > 2.51 mm) ensured that the physical pin dimensions (20-25 mm) were safe from shear failure due to shock loads. Mechanical challenges encountered included the lack of a belt cover (safety guard) and potential corrosion of the cast iron body, therefore, the use of SUS 304 stainless steel is recommended for further development.
